Helloooooo! If you’re here, you are looking for a spaghetti refresh. I am with you. I love spaghetti, but sometimes, I just want something different. Welcome to different! I had green spaghetti for the first time in Peru and it has become comfort food to me. This delicious green spaghetti recipe will have your mouth watering and your kids asking for more. I mean, it’s green. It also doesn’t have any pesto so it reheats really well! This is something my mom has made my entire life. Green Spaghetti Recipe
Ingredients
- 1 lb of fettuccine noodles
- 8 oz of spinach
- 4 oz basil
- 4 oz of cream cheese
- ½ tsp minced garlic
- ¼ cup of water
- ¼ cup and 2 tbsp of vegetable oil
- 2 tsp salt
- Pepper to taste
- 2 tbsp of grated parmesan cheese
Instructions
First thing’s first, you need to get those fettuccine noodles cooking! Fettuccine noodles work best for this recipe because they allow maximum sauce coverage on the noodle. However, if you don’t have them, no sweat! It will still taste good with spaghetti noodles.
Once you’ve got the noodles cooking, you can blanch the spinach and basil. If you don’t know how to blanch, check out these instructions on how to do so! Don’t forget to squeeze the extra water out of the spinach and basil after you’ve blanched it. If you don’t have time to though, you can just skip this step and go straight to the blender step.
Next, you want to put the spinach, the basil, cream cheese, garlic, ¼ cup of vegetable oil, and water into the blender. Season this with 2 tsp of salt and pepper to taste. We love using our Ninja blender for this because it mixes everything so well and so quickly! There isn’t a lot of time spent pushing everything down so the blade can catch it to chop it up.
Once you’ve got your mixture nice and smooth, in a deep skillet, add 2 tbsp of vegetable oil, and heat set to medium heat. Once heated up, add the cream mixture from the blender and fry for about 2 minutes. Add the 2 tbsp of parmesan cheese and fry for 1-2 more minutes or until cooked through. Add salt and pepper if needed. Remove from heat.
Once this is done, it’s good to go! You can just add your cooked noodles to the skillet and mix until well covered. Serve with your favorite protein (we love steak with it!) and a side vegetable.
That’s it! Easy peasy. And super fast! We love this meal year-round, but we especially love it as a St. Patrick’s Day recipe. I mean, it’s green. Like, super green. Very fitting for St. Patrick’s Day food!

1/4 cup Water
1/4 cup Vegetable Oil
2 tbsp Vegetable Oil
2 tsp Salt
2 tbsp Grated Parmesan
Pepper (to taste)
Directions
- Cook the Fettuccine noodles according to the package instructions
- Blanch the spinach and basil. Be sure to squeeze out extra water after it’s been blanched.
- In the blender, add the blanched spinach and basil, cream cheese, vegetable oil, minced garlic, water, salt, and pepper to taste. Blend until the mixture is smooth and creamy.
Ingredients: 8 oz Spinach, 4 oz Basil, 4 oz Cream Cheese (softened), 1/2 tsp Minced Garlic, 1/4 cup Water, 1/4 cup Vegetable Oil, 2 tsp Salt, Pepper - Heat the skillet to medium heat and add 2 tbsp of vegetable oil.
- Once the skillet is warm, add the mixture from the blender and fry for 2 minutes.
- Add the 2 tbsp of parmesan cheese and then cook for another 1-2 minutes. All salt and pepper if needed.
- Remove from heat and add the cooked Fettuccine noodles. Stir until well mixed.
- Serve with your favorite protein. Bon apetite!
